So you'll take bus 629 to Admiralty after visitiing the Ocean park. From the Admiralty, you can take MTR to Central station (one stop), get off and then take the tram to the peak.
Or you may still follow the itineary before and take the tram down the peak after visiting it.
Tsim Sha Tsui is a famous shopping place and there are many shops, malls there, I think you may buy the eyewear there.

First day, taking MTR from Jordan Station to Disney Resort Station, stay the whole day in Disneyland and take MTR back to Jordan Station after the firework show in Disneyland. Then walk to Temple Street Night Bazzar from Jordan Station, after tasting the food there, walk back to the hotel.

Second Day, take MTR from Jordan Station to Admiralty Station and take Bus 629 to Ocean Park, stay there till afternoon and take Bus 629 back to Admiralty, after arriving, take Bus 15 to the Peak. After the visit at the Peak, take Bus 1 down the hill and take Star Ferry to Tsim Sha Tsui, you can also take Bus 15 down the hill and take MTR to Tsim Sha Tsui. There walk to Avenue of Stars and watch the Symphony of Lights show which starts at 20:00.
Third Day you can take MTR from Jordan Station to Tung Chung Station and go to the Citygate Outlets for Shoppig, if time is still enough, you can take the Ngong Ping 360 Cable Car to Ngong Ping and visit the Giant Buddha and Po Lin Monastery. And also you can get to Ladies Market if you still have time in the afternoon, Ladies Market is located close to Mong Kok MTR Station.
