The hostel is inside Chung King Mansion just above Tsim Sha Tsui MTR Station. You can walk to China Ferry Terminal through Haiphong Road. Then take ferry to Macau on the second day. In the first day, you can get to see the Victoria Peak and get around Central. Within walking distance from your hotel, you can go to Avenue of Stars, Space Museum, History Museum and many shopping centers. Anyway, not easy to recommend, for there are so many place you can visit and I don't know what kind of attractions you prefer. Perhaps allow early check-in, it depends. Anyway, you can discuss about this with the hostel owner. The cheapest way to the hostel I think it should be air bus A21, get off at middle Road Nanthan Road. The bus fare is 33HKD. As to your sched, I suggest you put Symphony of Light on Day 3, on the star ferry or Avenue of Star.
First day, take mtr from TST to Tung Chung, then take bus 23 or cable car to Ngong Ping for Giant Buddha and Polin Monastery. Back to Tung Chung and then take mtr to Sunny Bay. Change to disney line to disneyland. Day 2, walk to China Ferry Terminal in Tsim Sha Tsui and then take ferry to Macau. Day 3, take mtr to Central and then walk to the peak Tram station in Garden Road. Back to Central and take bus 6, 260 at CEntral Exchange Square to Repulase Bay. Do not know jewlery factory outlet, sorry. Back to Central and take star ferry at Central Pier to TST. Walk back to hotel.
