To do this in one day?! I think your hotel is close to Ngong Ping 360 Cable station which take takes a coupld of minutes walking. It takes only some twenty minutes to Ngong Ping and if you do not want to see the Po Lin Monastery and Ngong Ping Bazaar, you can be back in an hour or so. Then return to Tung Chung by cable too. Shift to Tung Chung MTR Line to Hong Kong Station. Get out from Exit F and walk to Central Star Ferry Pier nearby. Take bus 15 there to the top of Victoria Peak directly. Take the same bus back and get off at Admiralty. Then take MTR to Tsim Tsui Tsui. Or you coma back to Star Ferry in Central to take the ferry to Tsim Sha Tsui. You can see the Symphony of Lights in Avenue Stars of TST, or on the ferry. The light show is on 8pm. Then back to your hotel by MTR from TST via a tranfer at Lai King.

Hi, the best itinerary is taking Ngong Ping 360 from Tung Chung to Giant Buddha, after that, take Bus 23 down the hill and then take MTR to Hong Kong Station, after arriving, take the Peak Tram to the Peak, and at around 19:00 in the evening, take Bus 15 down the hill to Admiralty Station and then take MTR to Tsim Sha Tsui and walk to Avenue of Stars to watch Symphony of Lights. Better visit Giant Buddha and Ngong Ping for the morning and go to the Peak in the afternoon.
