If you have a single entry visa to China, you can visit anywhere in mainland China (open to foreigners), except Tibet, which you need further to apply for a entry permit.Germany passport holders emjoy a visa free period for 90 days to Hong Kong, so, you can enter Hong Kong without a visa. So, it is no problem.
