Hi, you time staying in Hong Kong is enough for the attractions you've listed. You can spend one day in Disneyland, more than half a day to Ngong Ping, afternoon and evening to the Peak and wax museum, which are at the same place. And for Ocean Park, also more than half a day would be enough. For transport, to the Peak, take bus or MTR to Central and take the Peak Tram, for Ocean Park, take Bus or MTR to Admiralty and then take Bus629. For Disneyland, take MTR to Disney Resort Station, for Ngong Ping, take MTR to Tung Chung Station and then take Ngong Ping 360 Cable Car.

The credit card you mentioned are acceptable in Hong Kong, widely used.
