You can take long distance bus at Luohu Bus Station or Futian Bus Station, the bus runs for around 4 hours and costs CNY120-170 per ticket.
There is one train from Shenzhen to Shantou daily, it takes around 8 hours, compared with bus, I think bus is much effective.
