About:China Train

I am interested in taking the following trains
D135 Beijing-Xinxiang
K21 Xinxiang - Guilin
T40/T37 Guilin - Guangzhou
and then a train to Hong Kong

Do all these trains travel every day?

Yes, the trains you mentioned travel each day. And in China, apart from some trains to Lhasa or Hong Kong, the other trains usually depart daily.
