You can buy Airport Express Travel Pass, when you arrive you can buy the card at the airport station, this card provide one or two times Airport Express Ride and unlimited riding on MTR in 3 consecutive days. You can also add value to it to use it on city buses and the Peak Tram.

Well, child under 3 years old is free when taking public transportation. You kid should purchase Child Ticket, which is about a half of an adult ticket.

No need to purchase the Airport Express Travel Pass at all, since you already book other transportation for airport. A standard onloan Octopus Card will be ok for you each. I think you could get the details about the card on this website.

You can go to Madame Tussauds the afternoon you arrive, after check in, go there and enjoy the night view of Hong Kong at The Peak. And you can also enjoy the Symphony of Lights show after visiting the Peak, just control your visiting time, the light show starts at 20:00.

The second day you can go to Macau, take ferry in the morning to there and take ferry back to Hong Kong in the evening.

The third day go to Ocean Park, if there is still time, you can go to Repulse Bay or Stanley Market.

The fourthday you can go to Disneyland, better bring your luggage there, since Disneyland is close to HKIA, you can go there and at last take MTR and S1 Bus to the airport to catch your flight.

the Card with one time Airport Express Train ride costs HKD220 while two times Airport Express Rides costs HKD300 per each. You can add value to it at any Customer service center at MTR Stations. But some stations don't have this kind of service, you can add value at some big stations like Tsim Sha Tsui, Mong Kok, Wan Chai, etc.
