I have one day to fly from Beijing to Zhengzhou for the purpose of touring Shaolin Temple and then fly back to Beijing.  Is this do-able?  What would be my travel alternatives?

Yes, it is doable, of course. It takes only five hours by bullet trains from Beijing West Rialway Station to Zhengzhou. If you are interested in Longmen Grottoes in Luoyang, you can see this either. One day is not enough to see those two.
