You may go to visit Giant Buddha and experience Ngong Ping 360 Cable Car.

Take S1 airport shuttle bus from HKIA (HK$3.5) to Tung Chung, go to Tung Chung Cable Car Terminal to take Ngong Ping 360 Cable Car to Ngong Ping Village. Then walk about 5 minutes to Polin Monastery and visit Giant Buddha.

After that, you can get back to the airport in time.
