Generally speaking, you can't apply for China visa in Nepal if you don't hold residence or work permit which shoul dbe valid for at least half a year. You can't apply for China visa from your home country more than 3 months in advance becasue a single-entry China visa is valid for 3 months, if you get the visa too early, it expires before you use it. Now, first, after you arriving in Nepal, please apply for a China visa at the China embassy within 3 months, if your application is refused, please mail back your passport and one paspsort photo and one filled visa applcation form to your relative or friend in New Zealand, ask them to apply for a China visa on your behalf, it takes 4 working days
