You can go to the Local Exit & Enter Department in China to apply for extension of stay duration of China visa, if your application is refused, you have to exit Mainland China, I guess that you can't get a China visa in Hong Kong if you don't hold Hong Kong ID card, you have to go back Philippines to apply for a new China visa.

it is alright to have a 7 days visa going to China - and should you decide to stay longer - you need to go to the local police station and extend your 7 day visa to a month or so. You need to pay for a fee.
