Ireland passport holders are exempt from a visa to Hong Kong for up to 90 days, so you don't need a visa to Hong Kong if you stay there for less than 90 days. You can apply for a Hong Kong visa at Chinese embassy in Ireland if you will stay there for more than 90 days.
