Ms.Helen, you can apply for Hk visa and Chinese visa in Macau. Generally speaking, the hotel reservation won't be required for Chinese visa application or Hk visa application in Macau, according to the situation of applicants, the financial certificate to cover the expense in travel and the ticket to next destination maybe asked by the visa officer.
