You can provide some certificate to certify that you need to stay in China for 60 days, then the visa officer will issue visa accoding to your demand. If you are unlucy to get a single entry tourist visa with 30 days stay in China, you can apply for extension at a local Exit & Enter Department under Public Security Bureau for another 30 days, please apply for it one week before your present visa expires.
