Well, when you arrive at Hong Kong Airport, please take bus A21 to Hung Hom train station firstly. Here, you could take the train to Luohu Port, go through which you could enter into Shenzhen City.

Just beside the port, you will find the Shenzhen Luohu Bus Station, which supplies coaches to Shantou City (Shantou Bus Station) from 07:30-21:40 every 20 minutes. The journey is about 4 hours.

Finally, at Shantou Bus Station, you could take a coach to Chaoan from 07:00 to 18:00 everyday.
