I want need to get back to HKG from Shantou - Is it easier and quicker to take a train or plane? Also - do you know general costs?

By plane. For there is no direct train at all. You should take train to Guangzhou and then back to HK. It takes 7 2 hours on rail. Cost: 230/150 RMB 190 RMB. It depends on hard or soft sleeper do you choose from Shantou to Guangzhou. You can search for air ticket price here:
