As far as I know, there isn't "master" or "visa" letters on some of the credit cards, but the China Embassy only accept credit cards with "master" or "visa" letters on.

I got a Notice on Calling Off Cash Payment from this website http://us.china-embassy.org/eng/hzqz/t335326.htm

October 13th, 2009

As of November 1st, 2009, the Visa Office of the Chinese Embassy in Washington DC will no longer accept cash payment for all document service. For Chinese visa, Chinese passport, authentication and notarization service, we will only accept Master Card, Visa Card and Money Order, Cashier's Check or Official Check (excluding personal check) payable to Chinese Embassy. For mail application and mailback service, we will only accept Money Order or Cashier's Check payable to Chinese Embassy.

Sorry for any inconvenience this may cause.

You can apply for a special tourist visa at the entry ports of Shenzhen, permitting 5 days stay in Shenzhen. As I know, even though you apply for Chinese visa in USA, the air ticket is not required for US citizens.
