I want to travel from Vietnam into China for 1 month, then onto Nepal. I plan to do this all overland. Will it be possible to obtain a visa in Hanoi and will i have any trouble getting a visa as i have no proof of leaving China?

It's possible to get a China visa in Hanoi if you can provide all the requirements, but it would be a probelm that you don't have any prro fof leaving China.
