About:China Visa Entries / Validity / Duration of Stay

Me and my Fiance are going to phuket next year February. On our flights to there and bacj we are going to stop over for 7 hours in Hong Kong. Will we need a visitors visa to enter Hong Kong for the day and do we need visa`s to go to phuket for 10 days.

I only know that you don't need a visa to HK.
