About:Apply for China Visa in a Third Country

Hello, I'm a Dutch citizen and traveling from Thailand - Malysia and Indonesia back to Holland with a stopover for 5 days in Hong Kong. The dutch Visa office won't let me apply for a visa untill 3 months prior to the stopover in Hong Kong. Then I am already in Thailand. What is the easyest way to get a visa? Kind Regards
