On the cruise ship, can you find out and advise, if dinner is served in one sitting to all passengers or in 2 sittings.

It depends. Some cruise ships offer buffet dinners, if there are many passengers, the dinner will be offered in 2 sittings. Most of the cruise company offer set menu for dinner, and in one sitting.
