I am traveling with an elderly person (80 years). Will be there any problem for us to visit Longsheng? Is there much climbing?

Yes, about 2 hours step-climbing is required if you visit the Rice Terraces. Perhaps it will be a little bit hard for the elder one. But there are private sedan chairs available at the foot of the mountain. You can hire one to carry you up.
