HelloI plan to travel from Guangzhou to Hong Kong by train a few days before Chinese New Year (on February 10th). How many hours/minutes should I be in the Guangzhou East railway station before taking the 8:15PM train to HK ? I will already have my train ticket. Thank you.

As there are always a lot of people taking a train at New Year period, you'd better go to the railway station as early as possible, at least 1 hour earlier.
