Are there any cooking/eating tours such as going around Beijing sampling the local delicacies or taking a cooking class where a teacher takes you to the local market & shows you how to cook the ingredients you bought?

I had a cooking class when I visited Beijing last year. As I took back now, I still think the class is really interesting. The teacher taught me how to made dumplings. I have more information to share with you. Usually the teacher just teaches you to cook some Chinese dishes in about 2 hours. There is no fixed hour for the class. Teacher may adjust the schedule and time for class according to his plan and the reservations, so the arrangement can hardly be guaranteed in advance.
