I'm Vietnamese citizen, are going to China (Shenzheng) for conference this November and planning to extend 2 days in Hongkong for travelling. So, have I apply visa for China and Hong kong seperately? What kind of document should I have to apply for visa?

Yes, you need 2 different visas to mainland China and HK.
For Visa to Shenzhen, you need the documents below:
1. Your passport with blank pages and at least 6 months validity left before expiration.
2. A truly and completely filled application form affixed with one passport-sized photo.
3.A Visa Notification Form issued by Chinese authorized unit.
4. Invitation letter from the organizer of the conference.
5. Round-trip air ticket and hotel reservation.
For the visa to HK, you have to prepare the following documents:
1. A completely filled application form (ID 1003A which can be be downloaded from www.immd.gov.hk.
).
2. Proof of adequate funds to cover the duration of his/her stay without working;
3. An onward ticket to the place of your destination.
4. Your recent photograph (affixed on page 1 of the application form ID 1003A)
5. Photocopy of the applicant's travel document containing personal particulars, date of issue, date of expiry and/or details of any re-entry visa held (if applicable)
6. Photocopy of proof of the proposed visit to Hong Kong (for purposes of visit other than leisure, transit, business or family visit).

In case that I am now studying in Japan, the document required for getting visa for China and HK is same as you mentioned?

From People Road, you may walk for 500 meters to Kengzi Bus Station to take East Express. After two stops, you will get off at Railway Station Stop and then walk to Home Inn.
