Got. Then you do need a visa to China, you can apply for the visa from the Chinese embassy in Sydney with the following documents:
1. One completed Visa Application Form with a passport photograph attached;
2. Your passport with at least 6-month validity and at least 2 blank visa pages;
3. Air tickets of Sydney-HK-China-France and hotel booking in China.
You can get more detailed info. here

Thank you very much for those infos. We got the Sydney HK airplane ticket but not the HK-China. In fact we want to catch a train to enter in China. Futhermore we don't have the hotel Booking, is it really necessary ?
