About:Visa Policy of China

I realise I need a tourist visa to travel from Hong Kong to Zhuhai. IF I then fly from Zhuhai to Xiamen and I need to change planes in Hong Kong (i.e. Cathay Pacific China Pass) do I need another visa to enter mainland China again?

You need a double-entry visa to enter mainland China twice.
