Philippine passport holders can stay enjoy visa-free access to Hong Kong and stay there for up to 14 days. You can apply for a China visa at the China visa in Manila. Normally, you are required to present hotel booking evidence when applying for the visa. In your case, you'd better specify your travel itinery in your application( you don't stay over night in Mainland China)
