We would like to see a few temles and museums but fast tours of those. Do not mind hectic sightseeing upto 5 pm but after that time want a relaxed pace. Can we take our own step of the tour?

No problem, as for a private tour, you are flexible on choosing the attractions in each city. And you can take the tour on your own step. You may just discuss that with your guides.
