I was wondering if I'm able to travel from Bangkok to Hong Kong to Sanya to Hong Kong to Beijing and then Bangkok to get a 72 Hour free transit.

Peter, as for your entry to Sanya, if you hold Australian passport, you can get the VOA there.
As for your entry to Beijing, if your layover time there is less than 72 hours, you can enjoy the 72 hour free transit.
