About:Chinese Greetings

How do I address chinese people in a letter

I wish to write them a letter, it's a male and female. so how do I address them both?

It depends on the relationship between you and them.
If you are friends, you can write "Dear Miss or Mr." or something like that.
If the letter is in a formal tone, you can add his or her's position, such as "Dear Prof. or Dear Dr.".
