I wish to write them a letter, it's a male and female. so how do I address them both?

It depends on the relationship between you and them.If you are friends, you can write Dear Miss or Mr. or something like that.If the letter is in a formal tone, you can add his or her's position, such as Dear Prof. or Dear Dr..
