we got our visa 17th/18th Dec. expiring date shows 14th feb. can we stay until 18th January?

That means you have to enter before or on Feb. 14, about how many days you can stay in China, you need check your visa carefully as DURATION OF EACH STAY. It is counted from the day of entry.
