Day 1, there are distinctive signs for the bus stations at HKIA, you can find it easily. It costs about HKD 17 from the hotel to CitiStore, and then walk for about 2 minutes to your hotel.
2. I don't think you can visit Ngong Ping, GIant Buddha, victoria peak, vistoria harbour, avenue of star on the same day, That will be a hurry trip. From your hotel to Ngong Ping, walk to tsuen wan metro station, take tsuen wan line to Lai king, transfer to Tung Chung line to Tung Chung, walk out of the station from exit B to take the cable car to Ngong Ping, and then back to Tung Chung station to take bus no. 23 to Giant Buddha. To victoria peak, take tsuen wan line to Central to take bus no. 15C to the peak tram station to take the tram to the peak. Then back to Central to take Tsuen wan line to TST to enjoy victoria harbour, avenue of star and take a cruise ship to enjoy the symphony of lights. The ticket fare for the ship is about HKD188.
Day 2: take tsuen wan line to Lai King, transfer to Tung Chung Line to Sunny bay, again transfer to disneyland resort line.
Day 3: you can take bus No. A31 from your hotel to the airport directly. I think you can buy one octopus card, with which you may enjoy some discount when taking the Metro and bus in Hk.
